Cheese pie with caramelized onion with its crusty whole-grain bottom is simply delicious.
You need:
Base:
3.75 dl whole grain flour
0.5 tsp salt
2 tsp cumin
150 g butter
3 tbsp cold water
Filling:
6–7 (600 g) medium-sized red onions
1 tbsp butter
3 eggs
250 g Provansaal classic mayonnaise
0.5 dl milk
150 g grated cheese
salt
pepper
Mix flour, salt and butter into a crumbly dough to make the base. Add cold water and stir rapidly into an uniform dough. Put the dough ball in the refrigerator for 30 minutes.
While the dough is in the refrigerator, prepare the filling. Peel and slice the onions. Heat butter on the pan and fry the onions until they are glassy (about 10–15 minutes).
Pinch the dough to the bottom and edges of a buttered pie tray (28 cm). Make a few holes on the base with the fork and support the sides with foil. Pre-cook the base in a 200-degree heat for 10 minutes.
Mix mayonnaise, eggs and milk. Add salt and pepper according to taste. Cover the cooked base with onions, and pour on the mayonnaise mix. Sprinkle with grated cheese on top
Bake in the oven at 180 degrees for 20–25 minutes.
