In summer, you do not want to spend time in front of a hot oven! It is easier to mix it all together and let the cake set in the refrigerator. Marianne peppermint candies and lemon give the strawberry cake a pleasant freshness.
3 x 165 g Kalev light cookies
250 g condensed milk with sugar (Jaani)
200 g butter
150 g strawberries
1 tbsp lemon peel
2 tbsp lemon juice
120 g Marianne candy
Break the cookies into small pieces and crush the Marianne candies in the food processor for finer pieces. Wash the strawberries and chop them into smaller pieces. Melt the butter and leave to cool.
Mix the cookie pieces, Marianne candy, strawberries, condensed milk, melted butter, lemon peel and juice.
Put the dough into a springform pan (21 cm) or turn it into a roll like a Kirju Koer and hold at least 3–4 hours in the fridge. Serve with fresh strawberries!
